1 lg. pkg. of Pork Backbone
2 med. Onions
2 1/2 lb. Potatoes
2 c. Water
Salt & Pepper to taste
Red Cayenne pepper (if desired)

Directions:
Directions:
Boil Pork Backbone until tender. Separate bone and Meat; reserve liquid. Cube Potatoes and dice Onions, boil with 2 cups of juice from backbone. Add 2 cups Water. Cook Potatoes until almost done. Add 1 1/2 c. Meat from backbone. Simmer on low until potatoes are thick. Add salt and pepper to taste. Serve with cornbread or biscuits.
