2 cups dry green lentils
1/2 lb each mild and hot Italian sausage
2 cups chicken broth
1 cup chopped onion
1 can (16 oz) tomatoes, crushed
1/2 tsp oregano
1/4 tsp sage
1/4 tsp cayenne
2 medium carrots, sliced
2 stalks celery, sliced

Directions:
Directions:
Wash lentils in colander. Remove casings from sausage. Fry and break into small pieces. Drain fat. In a 6 quart pot combine lentils, sausage, 8 cups water, chicken broth, onions, tomatoes, oregano, sage and cayenne. Bring to a boil. Reduce heat, cover and simmer for 30 minutes, stirring occasionally. Add carrots and celery. Cover and simmer 40 minutes more. Makes 6-8 servings.
