1/2 cup yellow cornmeal
1/2 cup whole wheat flour
1 1/2 tsp baking powder
1/8 tsp red pepper
1 egg white, slightly beaten
1/3 cup evaporated skim milk
1 tbsp honey
1/4 thinly sliced green onions
2 tsp cold pressed oil

Directions:
Directions:
1. combine cornmeal, flour, baking powder and red pepper
2. combine egg, milk, honey, green onions and oil. Add to dry ingredients, stirring just until moistened.
3. spoon about 1 tbsp batter into miniature muffin pans sprayed with nonstick vegetable coating.
4. bake at 425 degrees for 10-12 mins or until lightly browned.
5. remove from pans immediately
