1 3/4 cup chicken broth
1/2 cup sliced carrots
1/4 cup chopped celery
1 cup peeled and diced potatoes
1/4 cup chopped onion
chopped ham (as much as you desire)
1 3/4 cup evaporated skim milk
3 tbsp cornstarch
1 cup shredded cheddar cheese

Directions:
Directions:
In a saucepan combine broth, carrots, potatoes, onions, ham and celery. Bring to a boil, reduce heat and simmer 15 minutes. With the back of a fork, slightly mash potatoes. Mix 1/4 cup of milk and cornstarch until smooth. Stir into broth. Add remaining milk. Cook until thickened, slowly stir in cheese until melted. Serves 4.
