2 cups white sugar
2 cups flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 cups oil or applesauce if you want lower fat
4 eggs
2 cups grated raw carrots
8 oz drained crushed pineapple
1/2 chopped walnuts (optional)

8 oz cream cheese
1 tsp. vanilla
2 cups icing sugar

Combined all Combine all dry ingredients together and stir. In a separate bowl mix oil (or applesauce) and eggs together. Add the carrots, pineapple and nuts. Make a well in the dry ingredients and add wet ingredients into the well. Mix well. Pour into greased and floured 9 X 13 inch pan. Bake at 350 F for 50 minutes.

Frosting: Cream ingredients together and spread over cooled cake.
