2 Tablespoons flour
2 Cups peeled, shredded russet potatoes (about 1 pound)
2 Tablespoon grated onion
1/2 Teaspoon salt
1/4 Teaspoon pepper
2 Tablespoons butter or margarine
2 Tablespoons vegetable oil

Directions:
Directions:
In a medium bowl, beat egg lightly; stir in flour until blended. Using dry paper towels, squeeze out all excess moisture from the shredded potatoes. In large skillet, melt butter with the vegetable oil over medium high heat. For each pancake, spoon 2 tablespoons of potato mixture into skillet. Flatten each with a spatula into a 3 round. Fry each side for 2 3 minutes, or until crisp and golden brown. Place fried pancakes in a single layer on a baking sheet and keep warm in a 200 degree oven while frying remaining pancakes. Serve with warm applesauce, if desired.
