1 Beef roast
2 Tablespoons oil
1 Onion, chopped
6 8 Potatoes, peeled and chunked into 1/2 pieces
2 Cans cream of mushroom soup
1 8 ounce bag shredded cheddar cheese

Directions:
Directions:
Brown beef roast in oil on stovetop in a Dutch oven pan. Season cooked beef with salt and pepper. Add onion. Add water to almost cover beef. Bake in oven at 350 degrees for 1-1/2 hours until almost done. Add potatoes to meat and cover with cream of mushroom soup. When potatoes are done, top with shredded cheddar cheese and return to oven till cheese is melted.
