1/3 Cup unsalted butter, softened
1/2 Cup sugar
1 Egg
3/4 Cup milk
1/4 Teaspoon vanilla
1-2/3 + 1 tablespoon cup sifted flour
2-1/2 Teaspoons baking powder
1/2 Teaspoon salt
1/2 Cup unprocessed bran
1 Generous cup fresh blueberries or unsweetened frozen blueberries, slightly thawed

Preheat oven to 425 degrees. Grease bottoms only of 12 muffin 2-1/2 pan. Beat together butter and sugar in a large mixing bowl until light and fluffy. Beat in egg, then milk and vanilla; mix well (mixture may look separated). In medium size bowl, sift together 1-2/3 cup flour, baking powder and salt, stir in bran. Add to butter mixture and stir briskly with fork just until dry ingredients are moistened; do not over stir as batter will not be smooth. In a small bowl, toss blueberries with 1 tablespoon flour. Fold into batter. Fill muffin sections in pan 2/3 full. Bake in preheated oven for 23 minutes or until golden brown. Remove pan to wire rack, loosen muffins with spatula and remove from pan immediately to prevent steaming.
