2/3 cup whole milk
2 tsp vinegar
1/2 cup vegetable shortening
1 cup granulated sugar
1 egg
1 tsp pure vanilla extract
1/2 cup cocoa
2 cups flour
1/2 tsp salt
1/2 cup hot tap water
1 tsp baking soda

Filling:
1 cup confectioners sugar
1/2 cup vegetable shortening
1 Tbsp milk
1 egg white

Directions:
Directions:
1. Heat oven to 350 degrees. Grease baking sheet. Combine milk and vinegar and let stand at least 15 minutes.

2. Cream shortening and sugar with an electric mixer until light and fluffy. Add egg and vanilla and mix thoroughly. Stop mixer and add cocoa. Slowly blend in, then add milk mixture.

3. Stir water and baking soda together. Alternately add to batter along with flour. Drop batter by generous spoonfuls onto prepared baking sheets, forming 2 inch rounds. Bake just until set, 7 to 9 minutes. Transfer to a wire rack and cool completely before filling.

4. For filling, beat all ingredients with an electric mixer on high speed until light, fluffy and shiny. 2 to 3 minutes.

5. Matching cookies by size and shape. Sandwich two together with filling.
