1 pkg (14 oz) Bakers Angel Flake
coconut (5-1/3 cups)
2/3 cup sugar
6 Tbsp flour
1/4 tsp salt
4 egg whites
2 tsp grated lemon or orange peel (optional)
1 tsp almond extract

Heat oven to 325 degrees

Mix: Coconut, sugar, flour and salt in large bowl. Stir in egg whites, grated peel and almond extract until well blended. Drop by Tbsp onto lightly greased and floured cookie sheets.

Bake 20 minutes or until edges of cookies are brown. Immediately remove from cookie sheets. Cool on wire racks.
Makes 3 1/2 dozen
