1/2 - C. oil
2 - C. Sugar(you can use brown sugar)
2 - well beaten eggs
2 - C. flour (can use whole wheat flour)
1/2 - tsp. nutmeg
1 - tsp. cinnamon
1 - tsp. soda
1 - tsp. salt
1 - C. chopped nuts
4 - C. diced apples(about 4 apples)

Directions:
Directions:
Cream together oil and sugar. Add eggs and mix well. Sift together flour, nutmeg, cinnamon, soda and salt. Add this to creamed mixture, stirring well. Now stir in nuts, and apples. Pour into well greased and floured pan. Make 1 tube pan or 2 small loaves. Bake one hour at 325 degrees. This is much better next day and keeps well.
