1 box Uncle Bens wild & long grain rice - cook according to directions
10 oz of graded sharp cheddar cheese (save some for top)
1 large can of mushrooms drained - you can use fresh if preffered
5 green onions sliced (save some for the top)
1 can of cream mushroom soup
1/2 cup of milk
4 med-large boneless skinless chicken breasts
6 TBSP Butter or Margarine

Directions:
Directions:
Cook Rice according to directions on box - set aside. Saute chicken in skillet with 2 Tbsp of butter until cooked thoroughly. Remove from the pan and cut into 1" chunks - set aside. Saute mushrooms and green onions with 4 Tbsp butter until tender. Once tender add 1/2 cup milk and cream mushroom soup. Heat until becomes liquid. In a lightly greased casserole dish layer 1/2 of the rice, 1/2 of the cheese, 1/2 of the chicken and 1/2 of the sauce. Repeat. Top with the remaining cheese and green onion. Bake at 350 approx 35-45 minutes.
