1 lb box ziti or penne pasta
1 – 15 oz container of ricotta cheese
2 jars of spaghetti sauce (brand/flavor of your choice)
1 lb ground beef
8 oz shredded mozzarella cheese
1 beaten egg
¼ cup grated or shredded parmesan cheese
Chopped onion (if desired)

Coat 9”x13” glass baking dish with cooking spray. Cover the bottom of the pan with a thin layer of spaghetti sauce (approximately 1/3-1/2 of a jar). Set aside. Cook pasta according to directions on the package, shortening the cooking time by 3 minutes. Drain and set aside. Cook ground beef and chopped onion. Rinse and set aside. In a large bowl, mix together the ricotta cheese, the mozzarella cheese, 1 jar+ of spaghetti sauce (make sure the mixture doesn’t look dry), and the beaten egg. Add the cooled pasta and ground beef and mix gently until coated. Pour into the 9”x13” pan. Top with the remainder of the spaghetti sauce and ¼ cup parmesan cheese. Bake uncovered at 350 degrees for 30-45 minutes (until well heated). Stir if needed during baking to prevent the noodles from drying out.
