"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 Lb. Pecan halves about 4 cups 1 egg white 1 tsp. cold water 1/2 cup sugar 1/4 salt 1/2 tsp. cinnamon
Beat egg white and cold water until frothy. Add pecans and stir to coat well. Mix sugar, salt and cinnamon. Pour into pecans and stir until all are coated. Cover a cookie sheet with foil. Spread pecans in a single layer. Bake at 225 for 1 hour. Stir every 15 minutes. Cool and store in a airtight container.
Personal Notes: These make a great dish to put with Christmas cookies to give away.
