Wash and place medium size cucumbers in brine of 1 cup pickling salt to 1 gallon of water. Let stand in cool place for a week. Then drain. Let stand overnight in clear water. In morning cut into 1/4 inch slices and place in mixture of 2 Tbsp. alum to 1 gallon water and SIMMER for 30 minutes. Drain off the alum water. Boil 2 cups sugar, 1 cup vinegar, mixed pickling spice and mustard seed. Inncrease the recipe for the amount of cucumbers you have. Let temperature of syrup drop to simmer. Then add cucumbers and slowly SIMMER until cucumbers look clear. Time consuming, but DO NOT BOIL! Place in jars, cover with syrup and seal. 5 minutes in a hot water bath assures a perfect seal.
