1 lb. ground beef
1 onion, chopped
2 cans (15 oz. each) black beans, rinsed and drained
1 can (14 1/2 oz.) stewed tomatoes
1 can (14 1/2 oz. diced tomatoes with green chilies
1 can (14 1/2 oz.) chicken broth
1 can (11 oz.) whole corn, drained
2 cans (4 oz. each) chopped green chilies
2-3 T. chili powder
1 tsp. ground cumin
1/2 tsp. dried minced garlic or 1 chopped garlic clove

Directions:
Directions:
Brown and drain fat from ground beef. Add onion and garlic clove (if using) and sauté until clear.
Place in slow cooker and add all other ingredients. Stir well. Cover and cook on high for 4-5 hours or until heated through.

Very easy to make. Great to come home to after a busy day at school. Add a salad and crusty bread and you've got dinner!
