1 can (19oz) black beans, rinsed and drained
1 package (10oz) frozen corn kernels, thawed
1/2 c finely diced sweet red pepper
1 clove garlic, finely chopped
3 T fresh lime juice
1 T Dijon-style mustard
1 T olive oil
3/4 t salt
1/2 t course black pepper

Directions:
Directions:
Combine black beans, corn, red pepper, and garlic in a large bowl. Whisk lime juice, mustard, oil, salt and pepper in a small bowl. Add to corn mixture. Let stand for 30 minutes.
