1 c. oatmeal 1 c. boiling water
1 sifter of confectioners sugar
1 c. brown sugar tsp. salt
1 c. white sugar 1 tsp. baking soda
2 eggs 1 tsp. cinnamon
1 stick butter 1 tsp. vanilla
2 c. candied fruit c. chopped nuts

Directions:

Combine oatmeal and boiling water. Allow mixture to cool. Mix all ingredients except confectioners sugar and bake at 350 degrees for 35 to 45 min. in a greased springform pan (similar to bundt but with a removable bottom). Cool. Turn upside down onto a cake plate and remove bottom and sides of springform pan. Fruit on the bottom should now appear on the top. Sprinkle all over with confectioners sugar and serve.

When I was growing up, my mom made us a similar version of this (without the upside-down part)every year at Christmas time. I created this recipe in my effort to recreate hers!
