2 refrigerated pie crusts
1 c. sugar
1 c. raisins
2 eggs
1 tsp. vanilla
1/3 c. melted butter
4 T. heavy cream
1/2 c. chopped walnuts

Directions:
Directions:
Roll out pie 2-1/2 inch cookie cutter, cut out 24 circles. Place the circles into miniature muffin tin cups. Beat the eggs, and add sugar, raisins, vanilla, melted butter and cream in medium saucepan. Boil at medium heat for 3 minutes. Add the walnuts. Put a teaspoon of mixture into each tart shell. Bake at 375F for 15 minutes.

These scrumptious butter tarts were given to me by a co-worker from Canada. Although a little rich for everyday, they make a great Christmas gift.
