4 oz. unsweetened chocolate
3 Tabs. butter
2/3 cup water
1 and 2/3 cups granulated sugar
6 Tabs. light corn syrup
1 Tabs. rum

Directions:
Directions:
1. Melt chocolate and butter very slowly in heavy saucepan. Heat water to boiling. When chocolate and butter have melted, add water and stir well.

2. Add the sugar and corn syrup to the chocolate mixture and mix until smooth. Turn the heat up until mixture begins to boil; adjust the heat so the sauce is just maintained at the boiling point. Allow sauce to boil, without stirring, for 9 minutes.

3. Remove sauce from heat and cool 15 minutes. Sir in the rum. Serve warm over ice cream or profiteroles.

This is a wonderful sauce-easy to make and foolproof if you don't boil it too fast or too long. Makes great snacking by the tablespoon, chilled or warm.

Can be successfully reheated in double boiler or in a fruit jar (good way to store) in a pan of simmering water. Again, do not overheat or sauce will get hard on ice cream.
