1 1/2 lbs lean ground beef
1 tsp Seasoned Salt
1 cup diced tomatoes fresh or canned
1 cup cottage cheese or ricotta cheese
10 Corn tortillas
1 pkg taco Seasoning mix
1 can (15 oz) tomato sauce
1 can (4 oz) diced green chilies
2 eggs beaten
2 1/2 cups grated Monterey Jack Cheese, I have used Colby Jack.

Directions:
Directions:
In large skillet, brown ground beef, stirring until cooked through; drain fat. Add taco seasoning mix, seasoned salt, tomatoes, tomato sauce, & chiles; blend well. Bring to boil. Reduce heat; simmer, uncovered, 10 min. In small bowl combine cottage cheese or ricotta cheese and eggs. In bottom of 9 x 13 inch baking dish, spread 1/2 of meat mixture. Top with 1/2 of tortillas; spread 1/2 of cottage cheese mixture over tortillas and top with 1/2 of grated cheese. Repeat layering, ending with grated cheese. Bake, uncovered at 350 for 20-30 minutes or until hot & bubbly. Let stand 10 minutes before cutting into squares and serving.
