French Onion Tart Recipe

4 T. butter
1 lb onions - thinly sliced
1/2 tsp salt
1/4 tsp black pepper - fresh ground
3 eggs
1/2 c. milk
1/2 c. light cream
1/4 tsp nutmeg
1 10" baked pie shell

In a large skillet, melt butter over medium heat. Add onions, salt and pepper; stir to combine. Cover and cook, stirring occasionally, until onions begin to caramelize, about 30 minutes. Remove from heat and set to one side. Preheat oven to 350.

In a mixing bowl, combine the eggs with milk, cream and nutmeg. Whisk together until well blended. Spread cooled onions over the surface of the baked pastry shell. Pour the egg mixture over the onions.

Bake in preheated oven until filling is set, about 30 minutes.
