Batter - 1 c flour, 1 t pepper, 1/2 t salt

Chicken parts

Mix batter ingredients in a brown bag from the grocery store.

Shake chicken parts - one at a time - and set aside. If you run out of batter, make more in the same proportions listed above.

Meanwhile, add 1 1/2" of oil into a high sided pot. Heat until a drop of water drizzles. Add three pieces of chicken -- top side down. Turn temperature of oil to medium. Then, add lid to pot. Cook 10-12 minutes. Before removing lid, turn oil back to high, remove lid and turn chicken. Turn oil back down to medium and cook for 5 minutes.

Remove chicken and drain well.

Our family stopped having this delicious fried chicken often since it is deep fried. BUT, for a treat, Big Katie perfected this and it is absolutely worth the splurge.
