Ingredients:  
Peeled Egg Plant or Zucchini
1 cup flour
Salt to taste
Pepper to taste
1-2 eggs

Directions:
Directions:
Slice the Egg Plant or Zucchini
mix flour and salt & pepper in bowl or Ziploc bag
Whip eggs in a bowl

Dip slices in egg, then coat with flour mixture. Pan fry in melted butter until golden brown.

Personal Notes:
I would eat egg plant when mom cooked it like this. Actually I liked it. So I think of mom when I cook eggplant. Zucchini works too, when you don't have egg plant.
