Measurements are approximate :
1 1/2 lbs. boneless Chicken Breasts
8 oz. Pine Nuts
Butter
2 Eggs
3 tbsp. Olive Oil
1/2 sweet White Onion, chopped
1/2 Red Bell Pepper (optional)
2 cloves Garlic
2 c. fresh Spinach
1 jar Marinara Sauce
1 1/2 c. Mozzarella Cheese
1/2 c. Parmesan Cheese

Roast Pine Nuts on cookie sheet in oven for approx 8 min @ 400 until they are just turning brown. In the meantime, pound out the Chicken Breasts with a meat tenderizer. Take roasted Pine Nuts out of oven and place aside to cool. Turn oven down to 350. In a saute pan (with lid) add approx 2 tsp. Butter and melt on Med heat. Add chopped White Onion and saute for 2-3 min. Add minced Garlic and saute for another minute. Add raw Spinach and cook until just wilted. Add the Marinara Sauce to the same pan and mix with Spinach. Put lid on pan and let simmer on low heat. In a pie pan or shallow dish beat the Eggs and set aside. Once Pine Nuts have cooled, chop finely and transfer to dinner plate. Heat Olive Oil on med-high heat in fry pan or skillet. Dip Chicken Breast into egg and coat on both sides. Immediately dip coated Chicken into chopped nuts again coating on both sides. Immediately transfer to heated skillet and fry on each side for a couple of minutes until slightly browned. Place browned Chicken Breast into 3 qt. baking dish. Repeat the same process with each chicken breast laying the browned chicken breasts creating ia single layer in the pan. Once layer is complete pour Marinara Sauce over the top to coat completely. Sprinkle generously with Cheeses. Cover with aluminum foil and bake for 35 min or until Cheese is melted and bubbly. Can be served with gluten-free (or regular) pasta.
