3/4 c. Butter
3/4 c. All-Purpose Flour
Salt
1/8 tsp. Nutmeg
1 qt. Milk
2 c. Turkey Stock or Chicken Broth
4 Egg Yolks
1 c. Heavy Cream
1/2 c. Dry Sherry, optional
1 lb. Thin Spaghetti, cooked and drained
6 c. Turkey, Cubed
2 c. Whole Fresh Mushrooms [small], cleaned
8 oz. Sharp Cheddar Cheese, Grated

Melt Butter in saucepan, remove from heat, stir in Flour, 3 tsp. Salt and Nutmeg, stir until smooth; over low heat gradually add Milk and Stock/Broth and bring to a bubbling boil, stir a couple of minutes until thickened. In small bowl whisk Egg Yolks with Cream, beat in a little of the hot mixture into the Egg/Cream mixture, pour all back into saucepan, cook until sauce is heated through over low heat [do not boil], remove from heat and stir in Sherry. Add 2 cups sauce to cooked Spaghetti, toss together, pour into large buttered baking casserole that has a lid. Pour 2 cups sauce over Turkey and Mushrooms, spoon over Spaghetti, pour remaining sauce over all and top with grated Cheese. Refrigerate 1 hour or overnight. Bake 350 for 1 Hour.

Some of the sauce can be reserved to pass or pour over each portion when serving. Also good with Grated or Shaved Parmesan-Romano Cheese.
