12 Eggs
1 1/2 c. Half n' Half
1 tbsp. Dried Oregano Leaves, rub into palms to release flavor
1/2 tsp. Cumin, Ground
1 tsp. Salt
1/4 tsp. Pepper, fresh ground
12 Whole Green Chilis, fresh roasted Hatch
1 lb. Longhorn or Longhorn Colby Cheese
1 c. Grated Longhorn Cheese

Preheat oven to 375
Butter flat casserole pan and set aside.
Stuff whole Chilis with long strips of Cheese. Use extra strips to lay between Chilis. Whisk Eggs with Half n' Half and spices. Pour Egg mixture over Chilis. Top with grated Cheese. Cover with aluminum foil. Bake in oven for 15 minutes, remove foil and bake about 15 more minutes until center of eggs is set.

This is very similar to Dad's [Cliff's] recipe but it has more Eggs and different spices that he taught me to add. And, you want to make sure some is left over. I make it for breakfast and dinner or a brunch! Serve with Tortillas or Garlic bread.
