water
diced onion
ham or bacon
butter or margarine
half & half
salt, pepper
parsley flakes, chives
cheddar cheese

Directions:
Directions:
Cut up potatoes in chunks (smaller then for potato salad) and put them on to boil. Add just enough water to cover the potatoes. Add diced onion and either ham or bacon for flavor. Boil until potatoes are falling apart. Add a couple of tablespoons or more of butter or margarine (depending on how much soup you are making). Add half & half (however much you want, you will know when the color is right). Combine to cook over medium heat; stir occasionally and if the potatoes are still kind of big, you can smash them a little. Salt and pepper to taste, add parsley flakes, and I have also added dried chives. When serving, you can garnish it with shredded cheddar cheese and fresh chives if you like. Serve with crackers, but it is also good with cornbread.
