6-8 potatoes cut in cubes
3-5 hard boiled eggs diced
Salad Dressing judge by moistness
Mustard judge by color & flavor
diced onion as desired
diced pickles
pickle juice
Salt & Pepper to taste

Directions:
I learned to make potato salad from mom. She just kind of put it together no specific ingredient amounts. Peel & cube potatoes boil. Hard boil eggs. In a large bowl add slightly tender cooked potatoes, drained. Add desired amount of chopped pickles and onions. Add salad dressing (maybe about 2 cups) and about 1-2 Tbsp mustard to moisten. You can always add more if needed. I generally go with a light creamy yellow coloring.
Also add just a little pickle juice... 2 - 3 Tbsp. Mom liked to add everything while the potatoes were still warm. Me too. Mix well and chill and serve. To garnish you can save some hard boiled egg and slice. Arrange slices on top of salad and sprinkle lightly with paprika.
