3-4 Chicken breasts, cooked & cut up
3 cans cream of chicken soup
1 (8 oz) container sour cream
chopped onion if desired

4 cups cooked rice
1 cylinder Ritz crackers, broken up
1 cube butter melted
2 Tbs poppy seeds

Directions:
Directions:
Combine chicken, soup, sour cream and onions, the night before. Next day, spread rice on the bottom of a 9 x 13 pan. Pour chicken mixture over rice. Mix together crackers, butter, and poppy seeds, sprinkle on top of casserole. Bake at 350 for 40 minutes
