1 lb boneless cod
1/2 c. milk
1/2 c. water
1 c. rice - instant
1/2 c. green peppers - diced
2 T. vegetable oil
3 eggs - hard boiled, mashed
1 carrot - grated
1 T. parsley - fresh or dried

Directions:
Directions:
Combine fish, milk and water in a pan over medium-low heat and simmer for 20 minutes.

Steam or cook rice (leftover takeout Chinese white rice is perfect) as per package directions.

Add green peppers, oil, eggs, carrot and parsley to the fish. Simmer for 5 minutes.

Serve as a scoop of rice topped with 1/2 cup of fish mix.
