3/4 cup sugar
1/3 cup plain flour or 3 T. corn starch
1/4 tsp. salt
2 cups milk
3 beaten egg yolks
2 T. butter
1 tsp. vanilla
1 cup coconut
1 9" pie shell

Meringue:
3 egg whites
1/4 tsp. cream of tartar
1/2 tsp. vanilla
6 T. sugar

Directions:
Directions:
Combine sugar, flour, & salt. Stir in milk. cook & stir on med. heat until mixture bubbles. Continue to cook & stir for 2 mins. Remove from heat. Put a small amount into egg yokes and then return to hot mixture. Cook another 2 mins. Remove from heat. Add butter and stir until butter melts. Add vanilla and coconut. Put in cooled baked pie shell. Top with meringue sprinkled with coconut and bake at 350 for 12 - 15 mins.

Meringue:
Beat egg whites, vanilla, & cream of tartar. Gradually add sugar & beat until mixture forms peaks. Put on pie and then sprinkle with coconut.
