4 eggs,6 tbsp.sugar,3 cups milk,scalded,pinch of salt, few gratings nutmeg.1 egg white for brushing pastry.

Directions:
Directions:
Slightly beat eggs,heat milk to scalding point.Add sugar,salt,and milk to eggs. Line plate with pastry and build up a fluted rim.Brush inside with egg white slightly beaten with fork.Strain mixture into shell and sprinkle with a few grains of nutmeg. Bake 10 mins.at [450 ] then reduce heat to slow[300]and bake until firm when tested with silver knife
