1/2 cup butter softened
1 yellow cake mix
1/2 cup coconut
1 (20-oz.) can of apples, drained well
1/2 cup sugar
1 teaspoon sugar
1 teaspoon cinnamon
1 cup sour cream
1 egg

Directions:
Directions:
Preheat oven to 350. In bowl, cut butter into dry cake mix until crumbly. Add coconut; pat mixture into ungreased 9-x13-inch pan. Build up edges and bake 10 minutes.
Arrange apples on warm crust. Mix sugar and cinnamon and sprinkle on apples. Blend sour cream and eggs; drizzle mixture over apples.
Bake 25 minutes till light brown.

This is easy and quick, and I made this a lot at OBU. Karen Schaffner who discipled Teresa in 9th and 10th grade gave us this recipe. Debbie and Karen roomed together the summer of 1977 right before Jerry and Debbie married. Debbie worked that summer as a lifeguard at the Shawnee Elk's Club. Karen has served in Japan as a missionary/professor of German her entire life.
