6 ears white corn 1 red pepper 2 jalapeņo peppers cooking spray 1 tsp. olive oil 1 bunch (6) green onions (sliced) 1 tbsp. lime juice 2 tbsp. basil or cilantro 1 tsp. salt & pepper
Spray all vegetables with cooking spray. Grill corn and peppers for 10 or 15 minutes. Cut corn off cob and dice peppers. Add sliced green onions and all other ingredients. Stir and chill or serve at room temperature.
