6 lbs. red potatoes
6 eggs, well beaten
2 tsp. salt
1 can (12oz) evaporated milk
1/4 tsp. pepper
1 lb. bacon with drippings
margarine
1 medium onion, chopped

Directions:
Directions:
Dice bacon and fry till crisp. Saute the onions in margarine until golden. Set both aside to cool. Peel and grate potatoes, add eggs, salt, pepper and evaporated milk. Add bacon and drippings. Add onions and margarine to the mixture and mix well. Pour into greased 13 by 9 by 2 inch baking dish. Place in preheated 450 oven for 10 minutes. Lower temp to 350 and bake until edges are crispy brown, about 1-1/2 hours. Serve with sour cream or applesauce.
