"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

2 oz. red food coloring
2 heaping T cocoa
1 1/2 c sugar
1/2 shortening (I use butter)
2 1/4 c cake flour
1 c buttermilk
1 t salt
1 t vanilla
1 t baking soda
1 T vinegar
2 eggs

Cream sugar, shortening & eggs. Make paste of cocoa & food coloring. (Be sure to mix just a little at a time so it becomes evenly blended.) Add to creamed ingredients.
Sift flour and salt together and add alternately with buttermilk. Add vanilla.
Mix 1 t soda with 1 T vinegar (it will foam) and FOLD IN, DO NOT BEAT ANYMORE.
Bake at 350 for about 30 mins. in 2 layers.
