"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
2 oz. red food coloring 2 heaping T cocoa 1 1/2 c sugar 1/2 shortening (I use butter) 2 1/4 c cake flour 1 c buttermilk 1 t salt 1 t vanilla 1 t baking soda 1 T vinegar 2 eggs
Cream sugar, shortening & eggs. Make paste of cocoa & food coloring. (Be sure to mix just a little at a time so it becomes evenly blended.) Add to creamed ingredients. Sift flour and salt together and add alternately with buttermilk. Add vanilla. Mix 1 t soda with 1 T vinegar (it will foam) and FOLD IN, DO NOT BEAT ANYMORE. Bake at 350 for about 30 mins. in 2 layers.
