3 lbs. Italian sausage links
8 green peppers
4 large onions
1 (6 oz.) can of tomato paste
1 (14 oz.) can tomatoes
1/4 c. canola oil
3 cloves fresh garlic, crushed
1-1/2 tsp. dried oregano
1/4 tsp. ground black pepper
Kaiser rolls for serving

Directions:
Directions:
Cut sausage links into bite size pieces and brown in a large pot or pan. Slice onions and peppers. In another large pot, add oil, onions and peppers and cook until onions and peppers begin to soften. Drain sausage and add to onions and peppers. Add the can of tomato paste, garlic, oregano and pepper. Mix well and bring to a boil. Once boiling, cover and simmer for 1-1/2 hours. Mix occasionally. Serve on Kaiser rolls or over pasta.
