"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
8 average-sized cukes (at room temperature) 2 average-sized onions 3 c vinegar 3 c sugar 1/4 c salt 1 tsp celery salt 1 tsp mustard seed 1 tsp tumeric
Slice cukes and onions about 1/4" thick and layer in an ice cream bucket. Boil all remaining ingredients and then pour on top of cukes and onions. Cover completely with brine, leaving 2" from the top. Let sit in fridge at least overnight before serving. Waiting a few days is better.
