6 eggs
3 T. finely chopped sweet onion
1 tsp. salt
1/8 tsp. ground black pepper
3 cups frozen shredded hash brown potatoes
1 cup shredded Swiss cheese
1/2 c. diced cooked ham
1/2 to 3/4 c. chopped colored pepper (green, red, orange, or yellow)
Can add small amount (4 leaves) chopped fresh basil
1 medium tomato

Directions:

In large bowl, beat eggs, onion, salt and pepper, basil
Stir in potatoes, cheese, ham and colored pepper
Pour into greased 9 in. pie plate. Bake at 350 for 40-45 minutes or until knife near the center comes out clean. Garnish with tomato slices.
