2-3 T. olive oil
2 garlic gloves (or equivalent minced)
1 pound skinless, boneless chicken breast cut into strips
1 1/2 c. fresh or frozen broccoli florets
3/4 c. roasted red peppers (can use jarred)
1 tsp. dried basil (or fresh equivalent)
pinch red pepper flakes
salt and pepper to taste
1/4 c. dry white wine
3/4 c/ chicken broth
Bow tie pasta (usually 1/2 pound enough)

Directions:
Directions:
Heat oil in skillet or wok. Saute chicken strips and garlic, until white and almost completely cooked (7-10 minutes)
Add broccoli and saute until crisp-tender, then add roasted red peppers, basil, red pepper flakes, salt and pepper. Add the wine and chicken broth. Cook 3-5 minutes until heated through, stirring occasionally. Add freshly cooked pasta and simmer till some of the moisture evaporated. Serve with Parmesan cheese.
