4 Chicken cutlets
fine Bread Crumbs
2 T. Olive oil
1/4 c. dry white wine
1 T. minced garlic
1/2 c. Chicken broth
2 T. fresh lemon juice
1 T. capers, drained
2 T. butter
Fresh lemon slices(optional)
canned artichokes, packed in water (optional)

Directions:
Directions:
Prepare cutlets by rolling in bread crumbs and seasoned with salt and pepper
Saute cutlets over medium heat in olive oil
Brown both sides and cover pan and cook for 2 minutes
Transfer cutlets to a plate and deglaze the pan with wine and add garlic. Cook until garlic slightly brown and most of liquid evaporated.
Add broth, lemon juice, capers
Return cutlets to pan, top with lemon slices, if desired, and 2 T. butter to "finish" sauce and cook for 2 minutes to allow chicken to soak up flavor
Artichokes can be added if desired

The trick to tender chicken is to be sure the chicken is thin (pound with a meat mallet if necessary)
