Corn Muffins Recipe

1 cup all purpose flour
1 cup cornmeal
1/4 cup packed brown sugar
2 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
1 beaten egg
1 cup milk
1/4 cup melted butter

1. In a mixing bowl, combine flour, cornmeal, brown sugar, cream of tartar, baking soda and salt
2. Combine egg, milk, and melted butter; add all at once to the flour mixture. Stir till just moistened.
3. Spoon batter into greased muffin cups, filling 2/3 full.
4. Bake in a 400 degree oven for about 20 minutes or till lightly brown. Serve warm. Makes 12 muffins
