1/4 cup hot mashed potatoes
1 tsp butter, melted
1-3/4 cups powdered sugar
1-1/2 cups flaked coconut
Dash of salt
1/4 tsp grated lemon or orange rind
1/2 tsp vanilla

Directions:
Directions:
Combine potatoes and butter in a medium bowl. gradually add sugar, beating until thoroughly blended. Add coconut, salt, lemon rind and vanilla; mix well. Drop by teaspoonfuls onto waxed paper and let stand until firm.
