1 2-lb pkg frozen hash brown potatoes
1 10.5 oz can cream of chicken soup, undiluted
1/2 cup sour cream
1 onion, chopped
2 Tbsp butter melted
1-1/4 cups grated cheddar cheese, divided

Directions:
Directions:
Thaw potatoes. Mix potatoes with soup, sour cream, onion, melted butter, 1 cup cheese and salt and pepper to taste. Reserve remaining 1/4 cup cheese as garnish. pour mixture into a well-buttered 9x13x2 inch baking dish.

Bake at 350 degrees for 45 minutes

Garnish with reserved cheese if desired.
