"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Make Tillie's pie crust (unbaked)

8-9 apples (use a tart apple- I use Granny Smith or Harrelson apples)
1 T. flour
1 c. sugar, divided
1 tsp. cinnamon , divided
dabs of butter

Directions:
Directions:
Divide crust in half. Roll out and place in 9" pie plate. Peel and core the apples. Place 1 T. flour on piecrust. Slice half of the apples into the crust. Sprinkle with 1/2 c. sugar mixed with 1/2 tsp. cinnamon on top of the apples, add the other half of the apples with the other half of the sugar and cinnamon. Dab with butter. Roll out the top crust and place on top of the apple pie. Dampen slightly with a tiny bit of water on your fingers and then sprinkle top of crust with sugar. Take a sharp knife and make a cross on the middle of the crust about 1" down and 1" across. This will let the steam out.
Bake at 425 for 45 mins. Cool on rack.
