2 pkgs. Uncle Ben's Wild Rice
3 whole chicken breasts, cooked and cut up
1 jar marinated artichokes (Cara Mia 6 oz.) hearts & marinade
1 c. Hellman's mayonnaise
4 oz. diced pimento
1 lb. fresh mushrooms, sliced
1 pkg. Good Seasons Italian dressing- make with wine vinegar & olive oil
1 c. finely chopped green pepper- we did not use--opt.

Directions:
Directions:
Cook rice using 1/2 c. less water than package directions and combine with chicken and mayonnaise. Chill.
Marinate the vegetables except for the mushrooms, overnight. Don't drain. Mix altogether. Serve on bed of lettuce or romaine leaves.

This was Pat Johnson's recipe and it was served at Kelly's bridal shower in 1990. It was very good.
