4 to 4 1/2 c. sifted flour
1 tsp. baking powder
4 eggs
1 lb. powdered sugar
1 tbsp. grated lemon rind
2 tsps. anise extract or 1 tsp anise oil

Directions:
Directions:
Grease cookie sheets well, or use parchment paper. Sift flour and baking powder in a bowl and set aside. In another bow, beat eggs until light (5 minutes). Add sugar, beating until well mixed. Add lemon rind & flavoring. Add flour mixture, starting with 3 c. Mix well. If dough seems sticky, add flour a little at at time. On a lightly floured board roll dough to 1/4 to 1/2 inch in thickness. Press springerle mold and make your own design. Cut into 2 inch squares. Expose to air 3 hours. (Note, traditionalist air the dough over night, which makes a hard cookie)
Bake at 350 for about 15 minutes, or until very lightly browned.
