1 1/2 lb. fresh green beans
1 T. sugar
1 T. salt
5 firm ripe tomatoes, sliced
4 sprigs fresh basil for garnish

Garlic-Basil Dressing
1 clove garlic
1 shallot
2 T. red wine vinegar
1 1/2 tsp. salt
1/8 tsp. freshly ground pepper
2 T. Dijon mustard
1 T. sugar
3/4 c. vegetable oil
15 fresh basil leaves

Directions:
Snap off stem tips of beans. Add sugar and 1 T. salt to boiling water. Drop in beans and cook until crisp-tender,6-7 minutes. Drain, plunge into ice water to stop cooking. Drain well and refrigerate. When ready to serve, toss beans with 1/3 c. dressing in large bowl. Taste; add more dressing as needed. Pile beans in center of large platter. Arrange tomato slices overlapping around the edge. Sprinkle with salt and drizzle 3 T. dressing on top of tomatoes. Garnish w/ basil sprigs.
To make the dressing turn on processor with steel knife and drop garlic and shallot down feed tube to mince. Add vinegar, salt, pepper, mustard and sugar. With processor running, slowly drizzle in oil. Add basil leaves and coarsely chop with several on/off pulses.
