3 or 4 yams/sweet potatoes - peeled, sliced or cubed

Maple BBQ Sauce:
3/4 c. maple syrup
3/4 c. apple cider vinegar
1/2 c. vegetable oil
1/4 c. molasses
1/4 c. soy sauce
2 T. dijon mustard
1 lemon - zest of one lemon
2 cloves - garlic, minced

1 tsp. salt - (coarse smoked salt is excellent)
1 tsp. black pepper - fresh ground

Directions:
Directions:
Put potatoes in large bowl. Mix the BBQ sauce ingredients together in small bowl, adjust seasonings to taste. Add lemon juice if you like it more tangy.

Pour liquid ingredients over the potatoes and mix together well.

Place potatoes on double thickness of foil and make pouch. Or make individual serving size pouches.

Heat on preheated BBQ - cook on medium for about 10 minutes per side or until tender. Sprinkle with salt & pepper as desired.

This is a great side dish for any barbecued meat.

Try the Maple BBQ Sauce on pork, chicken or fish toward end of grilling time to avoid scorching the sugar.

You could make this even faster if you use a ready -made salad vinaigrette or marinade of your choosing.
